Making your own cake mixes is easy and in-my-humble-opinion they taste better too.
Homemade Yellow Cake Mix
Shirley's Notes: this can be used for any recipe calling for a standard size cake mix box or as a stand alone cake. When using this cake mix, you will need to add 1 teaspoon of vanilla to the cake mix.
2 cups all-purpose flour
1 ½ cups sugar
1 Tablespoon baking powder
½ cup not-fat powdered milk
Combine flour, sugar, baking powder and powdered milk. Store in an airtight container or baggie. Keeps well in pantry for months.
To make a stand alone cake: add 1 tsp. vanilla, ¾ cup water, ½ cup butter softened, 3 eggs. Mix well Place into a greased and floured pan and bake at 350°F until done using the test with a toothpick. Approximate baking times: 8” or 9” in round pans: 20-25 minutes. 13X9” cake pan 35-40 minutes.
